
Living in the south for almost 4 years I definitely got hooked on southern food. One of my favorites is gumbo, which I learned can be a very labor intensive dish. I found a quicker (and much easier) way that tastes just as good. I usually use sausage and chicken but you can use any meat (or no meat) you prefer.
1. Slow cook chicken for 4 hours on high in a slow cooker. You want to season the water so that the chicken does not come out bland. I use seasoning salt, pepper, crushed red pepper, and some hot sauce (can you tell I like spicy food). You can use anything to season the water from garlic, onions, etc. Also, you don't have to slow cook the chicken I just prefer it if I have the time.
2. Once the chicken is cooked remove from slow cooker and dice up into smaller pieces.
3. Cut sausage into bite size pieces and cook.
4. Follow the directions of the Zatarins box to prepare the gumbo (boil water, add rice and meat, and cook for 30 minutes).

ReplyDeleteI LOVE gumbo! My mom is from Louisiana and I lived in Houston for two years. When i don't feel like going thru the labor intensive act of making gumbo I use Zatarins also. I usually saute a pack of boneless skinless chicken thighs and add them into the gumbo mix and let it cook on slow for an hour or two. Then I season to taste. Just when it's about finished I add crawfish,shrimp and crab. I crack at least two ccrabs beforehand so there is crab meat in the gumbo along with crabs to snack on! It is sooo good!
